MAPLE MEATBALLS
INGREDIENTS:
Meatballs
2 lbs. lean ground beef
1 lb. sausage
1 med. onion diced
1/2 cup maple syrup
5 oz. Asiago cheese, shredded
Dried, ground Oregano and Basil (optional) to taste/preference
Panko breadcrumbs
Sauce
Barbecue
Maple syrup
Combine all ingredients for meatballs except Panko breadcrumbs. Mix well. Add enough breadcrumbs to bind mixture. Shape into small balls. Brown in skillet.
Sauce: Combine barbecue and maple syrup to taste. Use as a topping for meatballs.
MAPLE PECAN SQUARES
INGREDIENTS:
Topping
2/3 cup maple sugar
1 cup maple syrup
2 large eggs, beaten
1/4 cup butter
1/4 teaspoon salt
2/3 cup chopped pecans
1/2 teaspoon vanilla
2 tablespoons flour
Base
1 cup flour
1/4 cup maple sugar
1/2 cup butter
Topping: (Make this first.)
Combine sugar and syrup in pot.
Simmer on stove for 5 min.
Cool and pour over the beaten eggs.
Stirring well, add the remaining ingredients.
Pour over partially baked dough and bake at 450 degrees for 10 min.
Reduce heat to 350 degrees and bake for 20 min. longer
Base: (Make this while the topping’s sugar and syrup are cooling.)
Preheat oven to 350 degrees.
Grease and flour an 8X10 pan
Gently mix the flour, sugar and butter, press firmly into the bottom of prepared pan.
Bake for 5 min. and set aside.
When all baking is completed, cool and cut into squares.
